Quinoa Kimchi Bowl
|1 cup||chicken/vegetable stock|
|1||small beet (grated)|
|1/4||red pepper, sliced|
|2||romaine lettuce leaves, sliced|
|3 oz||grilled chicken|
- Cook quinoa in water and stock for 15-20 minutes.
- Put quinoa in a bowl and arrange the raw vegetables over the top. Add chicken and cover with kimchi.
- Serve and enjoy!
